India Pale Ale, better known as IPA, is one of the most popular specialty beers in the world. It is a beer style appreciated by both beer enthusiasts and casual drinkers for its distinct flavor. But what makes IPA unique, how is it brewed, and what types exist?

How is IPA brewed?

IPA is a top-fermented beer, meaning the yeast is active at the top of the brewing vat during fermentation. The main characteristic of IPA is the use of plenty of hops, which provide bitterness, aroma, and natural preservation.

The brewing process for IPA includes:

  1. Mashing – the malt is heated in water to release the sugars.

  2. Boiling with hops – hops are often added in multiple stages: during the boil for bitterness, late in the boil for aroma, and sometimes also during or after fermentation.

  3. Fermentation – top-fermenting yeast is added and the beer ferments at higher temperatures than bottom-fermenting beers like pilsner.

  4. Finishing – the beer is filtered and bottled or kegged, often with additional hop aromas added.

What does an IPA taste like?

IPAs are known for their fruity, floral, or citrusy aroma thanks to the types of hops used. In terms of taste, an IPA can be bitter, but that is usually well-balanced by a light sweetness from the malt. Aftertastes are often long and refreshing, with tropical notes or pine aromas.

How did IPA originate?

The origin of IPA dates back to the 18th century in England. British brewers made special beer for export to India, which was a colony at the time. Because the long sea voyage took a lot of time, the beers had to contain extra hops as a natural preservative. This kept the beer shelf-stable during the journey and ensured it still tasted delicious upon arrival. Hence the name India Pale Ale.

Is IPA bitter?

Yes, IPA is usually bitterer than most other beers, and that is the defining profile of the style. The bitterness varies significantly, however:

  • English IPAs are subtly bitter and complex.

  • American IPAs are more robust, with distinct citrus and pine aromas.

  • New England IPAs are fruity and softly bitter, with a hazy appearance.

Types of IPA

There are several types of IPA, each with its own flavor profile:

  • English IPA – classic, moderately bitter, subtle hop aromas, light malt sweetness.

  • American IPA (APA/IPA) – distinctly bitter, tropically fruity, sometimes resinous (pine-like).

  • Double or Imperial IPA – stronger and more powerful, with a higher alcohol percentage and more intense hops.

  • New England IPA (NEIPA) – hazy, softly bitter, tropically fruity, and creamy mouthfeel.

  • Session IPA – lower alcohol percentage, lighter and refreshing, but still with hop aromas.

  • Black IPA / Cascadian Dark Ale – dark malt notes combined with the fresh bitterness of IPA.
